Galley hot wells heat every surface of your food pan enveloping your food in hot air, much like an oven, maintaining an even temperature on all sides of the pan. This design heats food evenly with maximum efficiency. Compare this to our competitors who only heat food from the bottom surface of their hot well.

Other serving line manufacturers make hot wells that only heat from the bottom up. In their hot well you have to use a higher temperature to radiate heat through the bottom of the food to maintain a safe temperature at the top of the food. This cooks the food on the bottom, drying out meats and burning items that touch this extra hot surface.

    Yes we can put drains into the 4” deep pan and this works fine. This is an option. However, we still recommend that the unit be run without water. The drain is used for clean out only.

    It’s important to recognize that Galley’s hot well is 4” deep and has an optional pan adapter part #8750 that allows for the use of a 6” deep pan.

    At Galley, our hot wells are manufactured in accordance with National Sanitation Foundation Standard 4 (NSF STD 04) which simply states that the foods are to be held at no less than 165 degrees. Hot foods taste better and are healthier.
